Garlic Chicken

Here's another simple recipe that you will surely love.

Ingredients:
1/ 2kilo chicken thigh
1/2 tsp salt
1/2 tsp pepper
1 tbsp garlic powder
1/2 tsp 5-spice powder
4 tbsp Evaporated milk
1 tbsp honey
2 tbsp lemon juice
1/2 tsp patis
Oil - for frying

Directions:
  1. Mix all the ingredients together
  2. Marinate chicken for a few hours
  3. Fry chicken
  4. Plate it

Carbonara

This is a simple pasta dish that you will surely love.

Carbonara

Ingredients:
200 lbs bacon bits
1 can (237lbs) mushroom, sliced
2 cups all-purpose cream
1 cup evaporated milk
1 cup cheese, grated
1 onion, chopped
1 tbsp butter
Salt to taste
½ kg cooked noodles

Directions:
1.       Fry bacon in a non-stick pan without oil.  It will produce its own oil.  Cook until crispy.  Set aside.
2.       Using the same pan and oil from bacon, add butter.  Let it melt.  Sauté onion and mushroom.
3.       Add bacon, all-purpose cream, evaporated milk and cheese.  Let it cook until it thickens.
4.       Add salt and cooked noodles. Plate it.

Crispy Kare-kare

This is a recipe I learned from watching a cooking show.  And since my husband loves kare-kare I tried.  Now, it’s one of his favorite dishes.

Crispy Kare-kare

Ingredients:

For crispy pork:
 ½ kg pork liempo
4 cups water
Cooking oil – deep fry
Salt to taste
Ground pepper

For sauce:
1 ½ tbsp peanut butter
3 cloves garlic, chopped
1 onion, chopped
1 ½ cups stock
2 tbsp cooking oil
Salt to taste

For vegetable:
3 medium eggplants, sliced
5-7 pcs string beans, sliced
1 tbsp bagoong alamang
3 cloves garlic
1 onion
1 tbsp stock
2 tbsp cooking oil

Directions
 For crispy liempo:
1.       Get a pan.  Put water, salt and pork.  Let it boil until the pork is tender.  Get the pork. Set aside the stock.
2.       Get frying pan put oil.  When oil is hot, put pork.  Deep fry until cooked.
3.       Cut pork into bite size.

For sauce:
1.       Put oil in pan.  Sauté garlic and onion.  Put stock let it boil.
2.       Add peanut butter.  Cook until thickens.
3.       Add salt.  Set aside

For vegetable:
1.       Put oil in a pan.  Sauté garlic, onion and bagoong alamang.
2.       Add stock, eggplant and string beans.  Let it cook.

Plate it.

Lemon Ginger Chicken Thighs

I got this recipe while buying our grocery list.  It looks easy to cook so I tried it.  Did I mention that it taste good?

Ingredients:
1 kilo chicken thighs  
1 piece lemon
1 tbsp ginger, grated
3 tbsps honey
2 tbsps water
1 tbsp soy sauce
1/2 tsp salt
2 tsps cooking oil
green onions sliced

Directions:

1.  Get lemon zest from lemon then get its juice.
2.  In a bowl, combine the lemon zest, ginger and salt.
3.  Rub this to the chicken thighs
4.  In another bowl combine the lemon juice, honey, soy sauce and water.
5.  In a pan, heat oil.  Place chicken - skin side down. Cook until golden brown.  
6.  Turn chicken and add lemon juice mixture. Cover and cook until chicken is tender.
7.  Transfer to serving plate. Top with green onion.



Chicken Sotanghon

This is just a simple recipe.  It’s actually included in our weekly menu.  Mainly because of the two lovely babies here at home, Yan-yan and Den-den, who like soups.

Ingredients:

3/4 kilo chicken cut into pieces
small  
200 grams sotanghon noodles (bean thread)
3 cloves garlic, minced
1 medium onion, diced
4 cups chicken broth or stock
3 tablespoons of cooking oil
Salt and pepper

Directions:

1.  In a pot, pour in cooking oil then let it heat.  Saute garlic and onion.
2.  Add chicken until in turns light brown.
3.  Add chicken stock.  Cover and let it simmer.
4.  Drop sotanghon noodles and simmer until noodles is tender.
5.  Add salt and pepper to taste.
6.  Serve hot

Puke-Puke

I learned this dish from a friend who is from Ilocos.   I actually got curious of this dish because of its name.  I tried cooking it.  Surprisingly it’s easy to cook and taste good.

Puke-Puke

Ingredients:
3 -4 pieces medium size eggplants
1/8 kilo ground pork
4 cloves garlic chopped
1 white onion sliced
1 tomato sliced
3 tablespoons of cooking oil
2 eggs beaten
Salt and pepper

Directions:

1.  Grill eggplants until soft.  Peel the skin.  Smash. Set aside.
2.  In a pan, pour in oil.  Let it heat.  Sauté garlic then add ground pork until its golden brown or cooked.
3.  Add the smashed eggplants, tomato and onions.
4.  Add salt and pepper to taste.
5.  Add eggs.  Let it cook.  Plate and serve it with rice.

Chicken Afritada

This is one of my favorite dishes.  I love dishes with tomato-based sauces.  And I just don’t enjoy eating them, I also enjoy cooking them!  


This is not just your typical aftritada.  There’s a little twist to it.  First is frying potatoes which I actually got from my husband and second is sautéing bell pepper with onions and garlic.  Try it and you’ll taste the difference.

Chicken Afritada

Ingredients:

3/4 kilo chicken cut into pieces  
2 pieces potatoes, quartered
1 piece carrot, sliced
1 bell pepper, sliced into strips
5 pieces baguio beans, sliced into two
1 cup tomato sauce
4 cloves garlic, minced
1 medium onion, diced
1 cup chicken broth or stock
3 tablespoons of cooking oil
Salt and pepper

Directions:

1.  In a pot, pour in cooking oil then let it heat.  Fry potatoes until slightly brown.  Set aside.
2.  In the same pot, sauté garlic, onions and bell pepper.
3.  Add chicken until in turns light brown.
4.  Add tomato sauce and stock.  Simmer until chicken is almost cooked.
5.  Add potatoes and carrot.  Simmer again until vegetables are soft.
6.  Add baguio beans and simmer for 2 minutes.
7.  Salt and pepper to taste
8.  Plate and serve hot
