Hainanese Chicken


In search for a healthy recipe for my husband, I came across this dish and, instantly, became part of my weekly menu. Try it too!

Ingredients:

Chicken:
1 kilo whole chicken
6 – 8 cloves garlic, crushed
1 thumb size ginger, peeled and sliced
1 bunch spring onions
3 tbsp rock salt
water

Sauce:
2 tbsp oil
1 onion, chopped
3 cloves garlic, chopped
¼ cup soy sauce
1 tbsp oyster sauce
Thumb size ginger, grated (note: I didn’t add this for my husband is not a fan of ginger)

Directions

Chicken:
1. Stuff chicken with spring onions, garlic, ginger and salt.
2. Put chicken in a pot and fill it with water enough to immerse the chicken.
3. Bring to a boil.  Let it cook for 30 – 40 minutes.
4. Remove chicken from stock.  Let it cool under running water. Set aside.

Sauce:
5. Heat oil in a pan.  Add garlic and onion (you can also add ginger), stir fry.
6. Add soy sauce and oyster sauce, mix well.

7. Plate chicken and sauce. Garnish with tomato and/or cucumber.
